Wheat flour milling process
Wheat is first cleaned thoroughly to remove dust, stone, and other foreign matters, then the clean wheat is tempered before grinding by treating with water so that the bran is separated from the endosperm. The tempered wheat is crushed between corrugated rollers (Break rolls). The first break rolls are set relatively far apart to grind the wheat lightly, while successive break yields finer and finer products. The first break is separated by sieving or bolting into very fine particles (flour), intermediate particles (middlings) and coarse particles (stock). The stock is then sent to second break rolls. This process may continue through 5 to 6 breaks. The stock contains pieces of endosperm and bran and the stock from the last break is principally bran. The middlings contains endosperm, bran and germ which are then successively classified and some of the bran removed are sent to reduction rollers. These are smooth rollers, but like the bread rolls, they are graduated so that successive reduction becomes finer and finer. After each reduction, sifters separate the flour, middling and stock, this process is continued until most of the endosperm has been removed as flour and most of the bran has been separated in the sifters.

What’s The Difference Between Roller Mill Flour and Stone Ground Flour

Roller mill flour is grains milled by either in opposing pairs or against flat plates. Roller grain mills are an alternative to traditional millstone arrangements in gristmills. Roller mills for rock complement other types of mills, such as ball mills and hammermills, in such industries as the mining and processing of ore and construction aggregate; cement milling; and recycling.

 Stoneground flour is a wholemeal flour produced by the traditional process of grinding grain between two millstones, it is nothing new, it is the way flour was made for thousands for years before electricity came onto the scene, but lately, it’s having something of a renaissance. In contrast to mass produced flours which are generally produced using rollers. The process leaves the wheatgerm more intact than roller processes for producing wholemeal flour, the larger pieces of bran and other components of the grain cause it to have a coarser texture but greater flavour. This affects its ability to rise, however it can produce a more satisfying texture for some baked product. The inclusion of more bran and intact wheatgerm in the flour means that it is often credited with significant health benefits. 

Stone Ground Flour is considered by many people to be more nutritious than other flours.

1.The Nutritional Composition Is Obviously Different
Stone ground flour with two scientific hook slot stone grinder, grinding at low speed(24-26 r/min), low temperature(below 45℃) state, wheat germ, protein, carotene, carbohydrates, calcium, phosphorus, iron, vitamin B1, vitamin B2, Dietary fiber and other nutrients completely preserved, it does not require any additives to ensure the quality of flour. All other commercial flours, such as roller mill flour, however, are ground with high speed (500～800r/min) steel rollers, the heat (120℃) generated by these steel rollers strips destroys many of the vitamins and enzymes in the wheat.

2.The Stone Ground Flour Is More Natural, Roller Mill Flour Is More White
Due to the difference in the grinding process, the stone flour contains a large amount of carotene and dietary fiber, so the stone flour is naturally white and slightly yellowish. While The roller mill flour appears very white for the using of high-speed and high pressure to take a lot of powder and too strong milling process. Therefore, a large number of various nutrients in the flour loss, the molecular structure of flour, starch chains are destroyed, reducing the stability of the flour, it is difficult to close, it is necessary to join the stabilizer.

3.Stone Ground Flour Have A Strong Flavor
From the taste point of aspect, stone ground flour due to grinding at low speed, low-temperature conditions, and the grinding times is less,  retaining the molecular structure of the flour, without any additives, gluten, wheat germ flavor (wheat Fragrance essence) and so on can be retained.

4.Low Production of Stone Ground Flour, High Production of Roller Mill Flour

The output of various fractions is termed as extraction percentages. A typical extraction comprises 60% refined flour or maida; 10% semolina or sooji; 7% resultant meal or atta and 13% bran.

Whole Wheat Flour Plant Production Process
The milling of wheat is basically divided into two sections viz:- cleaning section and the milling section. The milling section comprises the chaff remover; destoner; scourer; washing machine; intensive dampener; and cockle separator. In the cleaning section, wheat is cleaned thoroughly before milling. Wheat is first passed through sieves to remove chaff and stalks. From the chaff separator, it passes through a scouring machine wherein adhering dirt and mud and a part of the skin are removed. From the scourer, the wheat passes through the destoner and stones are completely separated from the grain. The grains are then fed into the washing machine where dust,  husk and  mud  balls are removed. The washed wheat is sent through a dampened to raise the moisture content of the grain and  then  for  conditioning.  After  conditioning for 36 hours, it is drawn for milling. The grain passes through a series of  milling rolls comprising the break rolls,  scratch  rolls,  and  the  polish  rolls,  purifiers,  and  plan  sifters  to  get  the desired fractions at the required percentages.

Wheat Flour Quality Specifications Of 
 The different product shall conform to the following specifications:
•   Atta:- Moisture -13.5% maximum; Ash - 2% maximum; Acid insoluble ash - 0.18% maximum; Gluten - 6% minimum; Alcoholic acidity - 0.18% maximum; Rodent excreta and human hair - absent.
•   Maida:- Moisture -13.5% maximum; Ash - 1% maximum; Acid insoluble ash - 0.10% maximum; Gluten - 7.5% minimum; Alcoholic acidity - 0.12% maximum; Rodent excreta and human hair - absent.
•   Sooji:- Moisture -13.5% maximum; Ash - 1% maximum; Acid insoluble ash - 0.15% maximum; Gluten - 6.0% minimum; Alcoholic acidity - 0.18% maximum; Rodent excreta and human hair - absent.
